Ingredients

  • 1 (5.3-ounce) round garlic & herb Boursin cheese
  • 2 pints cherry tomatoes (about 20 oz)
  • ¼ cup thinly sliced red onion
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 8 ounces uncooked bow tie pasta (or rotini/fusilli)
  • ¼ cup thinly sliced fresh basil (optional)
  • Freshly grated parmesan cheese for garnish (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. Place Boursin cheese in the center of a 9×13-inch baking dish. Surround it with cherry tomatoes, onion, and garlic.
  3. Drizzle with olive oil, then sprinkle with oregano, salt, and pepper. Gently toss to coat.
  4. Bake for 25–30 minutes until tomatoes burst and onion is soft.
  5. Meanwhile, cook pasta according to package instructions. Reserve ½ cup of pasta water.
  6. Remove dish from oven and stir the mixture, gently smashing tomatoes to mix with melted cheese.
  7. Add fresh basil (if using), then stir in cooked pasta. Add reserved pasta water gradually to loosen the sauce.
  8. Serve warm with extra basil and parmesan, if desired.

Notes

  • You can add baked or shredded rotisserie chicken for extra protein.
  • Avoid freezing; the cheese may separate.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat with a splash of milk or pasta water to restore creaminess.
