- 1 (5.3-ounce) round garlic & herb Boursin cheese
- 2 pints cherry tomatoes (about 20 oz)
- ¼ cup thinly sliced red onion
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- ½ teaspoon dried oregano
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 8 ounces uncooked bow tie pasta (or rotini/fusilli)
- ¼ cup thinly sliced fresh basil (optional)
- Freshly grated parmesan cheese for garnish (optional)
Instructions
- Preheat your oven to 400°F.
- Place Boursin cheese in the center of a 9×13-inch baking dish. Surround it with cherry tomatoes, onion, and garlic.
- Drizzle with olive oil, then sprinkle with oregano, salt, and pepper. Gently toss to coat.
- Bake for 25–30 minutes until tomatoes burst and onion is soft.
- Meanwhile, cook pasta according to package instructions. Reserve ½ cup of pasta water.
- Remove dish from oven and stir the mixture, gently smashing tomatoes to mix with melted cheese.
- Add fresh basil (if using), then stir in cooked pasta. Add reserved pasta water gradually to loosen the sauce.
- Serve warm with extra basil and parmesan, if desired.
Notes
- You can add baked or shredded rotisserie chicken for extra protein.
- Avoid freezing; the cheese may separate.
- Store leftovers in an airtight container for up to 4 days.
- Reheat with a splash of milk or pasta water to restore creaminess.
