Ingredients

- 4 cups chopped curly kale, stems removed
- 2 cups shredded green cabbage
- 1/3 cup roasted salted almonds
For the vinaigrette:
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup (or honey)
- 3 tbsp olive oil
- Pinch of salt (optional)

Instructions
- Massage the chopped kale with a splash of olive oil or salt until softened.
