Description

Creamy high protein beef pasta made with Greek yogurt and lean ground beef. Ready in 30 minutes and perfect for meal prep or dinner.


Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Cook the pasta until al dente, drain and set aside.
  2. Heat olive oil in a skillet, sauté onions and garlic until soft.
  3. Add ground beef, cook until browned, then stir in tomatoes, broth, yogurt, Parmesan, and seasoning.
  4. Simmer the sauce for 5 minutes.
  5. Combine pasta with the sauce and stir well to coat.
  6. Let sit 2 minutes on low heat.
  7. Serve hot with chopped parsley or basil.
