- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the pasta until al dente, drain and set aside.
- Heat olive oil in a skillet, sauté onions and garlic until soft.
- Add ground beef, cook until browned, then stir in tomatoes, broth, yogurt, Parmesan, and seasoning.
- Simmer the sauce for 5 minutes.
- Combine pasta with the sauce and stir well to coat.
- Let sit 2 minutes on low heat.
- Serve hot with chopped parsley or basil.
Notes
- You can swap in lentil or chickpea pasta for added protein.
- This dish freezes well for up to 2 months.
- Add crushed red pepper for a spicy kick or extra veggies like spinach.
