  • 1 small onion, diced
  • 1 pound ground turkey
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon lemon pepper
  • 2 tablespoons tomato paste
  • 2 cups water
  • 12 ounces penne pasta
  • 2 cups marinara sauce
  • 23 large handfuls fresh spinach
  • Juice of 1 lemon
  • Parmesan cheese, to taste

Instructions

  1. Press Sauté on your Instant Pot. Add olive oil and diced onion; cook for 1–2 minutes.
  2. Add ground turkey, salt, garlic powder, paprika, oregano, and lemon pepper. Sauté for 5 minutes until browned. Stir in tomato paste.
  3. Press Cancel. Add water and uncooked pasta; stir to combine.
  4. Pour marinara sauce on top — do not stir.
  5. Secure lid, turn the valve to sealing, and cook on High Pressure for 5–6 minutes (half the time listed on your pasta box).
  6. Quick release the pressure.
  7. Stir in fresh spinach and lemon juice.
  8. Sprinkle with Parmesan cheese and serve hot.
