For the Cake:
- 1 box spice cake mix
- 1/2 cup unsalted butter, melted
- 3 large eggs, divided
- 1 can pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
For the Frosting:
- 8 oz cream cheese, softened
- 1/2 cup light brown sugar
- 2 cups powdered sugar
- 1/4 cup milk
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, mix spice cake mix, melted butter, and 1 egg until combined. Press into the bottom of the dish.
- In another bowl, mix pumpkin puree, 2 eggs, pumpkin pie spice, and vanilla. Pour over crust layer.
- Bake for 35–40 minutes until edges are set and center is slightly jiggly. Let cool.
- Beat cream cheese and brown sugar until fluffy. Add powdered sugar, milk, and cinnamon; mix until smooth.
- Spread frosting over cooled cake. Chill before slicing and serving.
Notes
– Don’t overbake; cake should remain gooey in the center.
