This taco salad with Catalina dressing is a quick, flavorful meal packed with crunch, spice, and creamy textures. It’s perfect for weeknight dinners, meal prep, or feeding a crowd in under 20 minutes.

- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/3 cup water
- 1 large head iceberg lettuce, chopped
- 2 Roma tomatoes, diced
- 2 large avocados, sliced
- 4 green onions, chopped
- 15 oz can chili beans, drained and rinsed
- 1 cup shredded Mexican-style cheese
- 10 oz Catalina salad dressing
- 1/2 cup Nacho Cheese Doritos, crushed
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain any grease.
- Add taco seasoning and water. Stir to coat the beef, then simmer until most liquid evaporates. Let it cool.
- Chop lettuce, tomatoes, avocado, and green onions.
- In a large bowl, combine lettuce, cooled ground beef, tomatoes, avocado, green onions, beans, and cheese.
- Pour Catalina dressing over the mixture and toss to coat.
- Add crushed Doritos just before serving to keep them crisp. Serve immediately.
Notes
To keep the salad crunchy, add the dressing and Doritos just before serving. For a vegetarian version, skip the beef and double the beans or add black beans.
